Ingredients
- 2 cups grape tomatoes, halved
- 3 golden beets
- 1 avocado, sliced
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon Syrian Za'atar
- Salt to taste
Directions
- Preheat the oven to 400°F (200°C).
- Wrap the golden beets in aluminum foil and roast them on a baking sheet for about 45 minutes or until tender. Let cool, then peel and cut into half moons.
- In a mixing bowl, combine the halved grape tomatoes and roasted beet half moons.
- In a small bowl, whisk together the olive oil, lemon juice, Syrian Za'atar, and salt.
- Pour the dressing over the salad and toss gently to combine.
