  • 2 cups grape tomatoes, halved
  • 3 golden beets
  • 1 avocado, sliced
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon Syrian Za'atar
  • Salt to taste

  2. Wrap the golden beets in aluminum foil and roast them on a baking sheet for about 45 minutes or until tender. Let cool, then peel and cut into half moons.
  3. In a mixing bowl, combine the halved grape tomatoes and roasted beet half moons.
  4. In a small bowl, whisk together the olive oil, lemon juice, Syrian Za'atar, and salt.
  5. Pour the dressing over the salad and toss gently to combine.
  6. Slice the avocado and fan it out on top of the salad for presentation.
  7. Serve immediately or chill for a bit before serving.
