Spice 101

Summary

Our Pumpkin Pie Spice includes Indonesian Cinnamon, Vietnamese Cinnamon, Nutmeg, Ginger, Allspice, Mace, Orange, Cloves, and Indian Cayenne. This combination not only brings the classic warmth expected of pumpkin pie spice but also introduces a hint of citrus from the orange and a subtle heat from the cayenne, making it unique and versatile.

History

Pumpkin Pie Spice, a blend that has become synonymous with fall and cozy holiday baking, traces its roots back to the American tradition of pumpkin pie, a staple during harvest time and festive gatherings. Originally, the spice blend was crafted to complement the sweet, earthy flavor of pumpkin in pies, a dessert that has held a place of honor on Thanksgiving tables for generations.

The blend varies slightly by region and personal preference, but it typically includes cinnamon, nutmeg, ginger, cloves, and allspice. These spices were chosen for their ability to meld harmoniously and enhance the natural sweetness of pumpkin. Each component brings a unique element to the blend, making it a complex yet balanced mixture that enhances a wide array of dishes beyond just pies. This adaptability and the blend's warming properties have helped it gain a beloved status in kitchens around the world.

Why We Love It

Pumpkin Pie Spice instantly warms up any dish with its rich, aromatic qualities. Whether we're sprinkling it into a morning oatmeal, adding a dash to banana bread, or using it to spice up an apple pie, this blend delivers a comforting, nostalgic flavor that feels like a hug in a mug. Its versatility is unmatched—perfect for experimenting in both traditional recipes and new creations. The added touches of orange and cayenne provide a delightful twist that keeps every bite interesting.

The More You Know

While commercial blends became popular in the 1950s, variations of the mix have been used in home baking for centuries, especially in colonial America.

    Gingerbread Donuts

    Gingerbread Donuts

These cute mini donuts use our Gingerbread Spice to bring holiday flavors to the breakfast table. We couldn't decide between two different garnishes in our recipe testing, so we included them both. Dunk them in the sticky maple gingerbread glaze or roll them in gingerbread sugar, according to preference. Can't decide? We'd advise you to split the difference and make some of each, like we did!For those who might be discouraged from trying doughnut recipes due to the frying involved, we are relieved to say that these were baked. After much experimenting, we decided the yeast donuts were best, and everything else came easy. Easy enough to, say, make a double batch and garnish your eggnog or hot cider for an extra special treat.

A handful of pantry staples and Gingerbread Spice transform ordinary pecans into irresistible, sweet, and crunchy treats. Baking them on a sheet pan allows for an even candying process, and a midway stir ensures that the pecans emerge glistening with their lacquered shell. Whether you're savoring them as a snack or using them to finish off your salads or desserts, these candied pecans are an easy way to make these dishes extra special. Share them as a homemade gift or keep a stash on hand for whenever you crave a sweet, satisfying bite.

    Poudre Douce Pumpkin Latte

Right in the heart of downtown Seattle, we were savoring Fulcrum Coffee's Spiced Latte. We kick it off with a bold shot of espresso, mix in a pumpkin puree-infused syrup, add some sugar, and sprinkle in our Poudre Douce spice. The result? Well, it's not your average spiced latte. It's not cloyingly sweet, but it's incredibly smooth. This blend goes beyond your usual cinnamon kick. The fusion of ginger and allspice takes it to the next level, delivering an indulgent taste that's hard to resist.
