Apple Bulgogi Arugula Salad

Ingredients

  • 5 large apples 
  •  2 cups baby arugula                                                      
  • 3 tablespoons Bulgogi Spice
  • 1 tablespoon fish sauce
  • 2 teaspoons garlic
  • ¼ cup orange juice
  • 1 tablespoon soy sauce 
  • 2 teaspoons Pacific Flake Sea Salt

Directions

  1. Wash the apples and cut them into rustic 1-1.5 inch pieces. Discard the cores.
  2. In a small bowl, add the Bulgogi Spice, fish sauce, garlic, orange juice, soy sauce, and salt. Stir until combined.
  3. In a large bowl, add the apples and arugula. Pour the spice mixture over the apples. Toss until completely coated.
  4. Enjoy this salad cold!


Note:

This salad keeps well in the refrigerator for up to a week. Once the salad sits, it gets a kimchi-like texture and the apples don't oxidize!
