Combine ground beef, red onion, garlic, Kofte Spice, salt, jalapeño, pistachios, lemon zest, and parsley. Shape into palm-sized Kofte sausages, about 3 ounces each, and thread onto skewers.
Heat a large skillet on medium heat and add the olive oil. Grill for 4-5 minutes per side until golden brown, turning occasionally until fully cooked with an internal temperature of 165 degrees F.
Grate cucumber and squeeze out moisture. Mix with yogurt, lemon juice, mint, salt, and pepper for the sauce. Serve Kofte skewers with the cooling cucumber yogurt sauce. Feel free to sprinkle Marash Chile Flakes for extra heat.
