Spiced Kofte Beef Skewers
Enjoy the succulent, spiced beef Kofte skewers alongside the refreshing tang of the cucumber yogurt sauce. Perfect for grilling outdoors or on a stovetop grill pan, this Middle Eastern-inspired dish is savory and aromatic, and it is sure to be a crowd-pleaser.

Ingredients

  • 1 lb ground beef or lamb
  • 1/2 red onion, grated
  • 3 garlic cloves, minced
  • 1 tablespoon Kofte Spice, ground
  • 1 teaspoon Pacific Flake Sea Salt
  • 1 jalapeño, grated
  • 1/3 cup pistachios, chopped
  • Zest of 1 lemon
  • 1/2 cup parsley, chopped
  • 1 tablespoon olive oil 
  • Marash Chile Flakes, to taste

Directions

Combine ground beef, red onion, garlic, Kofte Spice, salt, jalapeño, pistachios, lemon zest, and parsley. Shape into palm-sized Kofte sausages, about 3 ounces each, and thread onto skewers.

Heat a large skillet on medium heat and add the olive oil. Grill for 4-5 minutes per side until golden brown, turning occasionally until fully cooked with an internal temperature of 165 degrees F.

Grate cucumber and squeeze out moisture. Mix with yogurt, lemon juice, mint, salt, and pepper for the sauce. Serve Kofte skewers with the cooling cucumber yogurt sauce. Feel free to sprinkle Marash Chile Flakes for extra heat.
