Mac & cheese is a family-friendly favorite and truly simple to make. Cook a box of pasta, make a quick cheese sauce, and you're good to go. Easily customizable, you can make your version with whatever collection of cheeses you choose.

In lieu of salty bacon and crunchy breadcrumbs, we've topped this luscious bowl of pasta with Voodoo. The spice provides both salt and texture to the dish along with an herby flavor and a slight touch of heat.

Voodoo Mac & Cheese

Ingredients

  • 16 oz box of Rotini or any twisty pasta you choose
  • 1/2 cup butter
  • 3 cloves garlic
  • 1/2 cup flour
  • 3 cups milk
  • 1 cup Cheddar cheese
  • 1/2 cup Mozzarella cheese
  • 1/2 cup Monterey Jack cheese
  • 1/2 cup Asiago cheese
  • Voodoo sprinkled to taste

Get the Spices

Directions

Boil a pot of water. Cook your pasta according to the directions on the box.

Drain and set aside.

Add the butter to a hot pan. Once it has melted, add the chopped garlic and let sit for 30 seconds or until it becomes fragrant.

Add in the flour and stir until the mixture becomes smooth.

Add in the milk and stir, ensuring that the milk doesn't burn.

Add the first cheese and stir gently until it is melted into the mixture. Repeat for each cheese.

Put the drained pasta back into the empty pot and slowly pour the hot cheese mixture over it stirring gently to evenly coat all the noodles.

Sprinkle the Voodoo on individual bowls to taste.


Note:

We like a thick, gooey cheese sauce, but you can make a lighter version by including less cheese.
