Place the ricotta on one side of a medium sized bowl. Using a spoon spread the ricotta to one side, creating a nest for the apricots to lay in.

Rustically pile the apricots on and evenly sprinkle the basil leaves on top. 

Drizzle the olive oil and honey over the top of the apricots and finish the salad with a sprinkle of Pacific Flake Salt and a crack of black pepper.

Dip a slice of apricot into the ricotta for a perfect bite.
