Tunisian Tuna Salad with Tabil Spice

This is the kind of salad that actually fills you up. Tabil's earthy, garlicky warmth in a simple lemon dressing, spooned over arranged vegetables, briny olives, hard-boiled eggs, and good canned tuna. Bright and fresh, but substantial enough to be dinner.

Ingredients

  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon Tabil, ground
  • Juice of 1 lemon (2 tablespoons)
  • 1 teaspoon Pacific Flake Sea Salt
  • 2 cans albacore tuna, drained
  • 1 English cucumber, cut into half moons
  • 1 bell pepper, diced
  • 1 cup grape tomatoes, halved
  • 1/2 cup green olives, halved
  • 2 hardboiled eggs, halved
  • 1/4 cup chopped parsley

Directions

  1. In a mixing bowl, combine the olive oil, Tabil spice, lemon juice and salt.
  2. On a large platter, arrange the cucumber, bell pepper, tomatoes, green olives, and hardboiled eggs in rows of colors like a rainbow.
  3. Disperse small piles of the drained tuna over the arranged vegetables.
  4. Drizzle the dressing evenly over the salad.
  5. Sprinkle the chopped parsley over the top.
