Aji Pimento Cheese Crackers
These little crackers combine a range of delightful chile flavors into every bite and will add a unique twist to your snacking or appetizer lineup. The mild pimento cheese is complimented with Aji mirasol chile peppers. They are mild and fruity with hints of tamarind and tomato. The pickled jalapeño on top adds a kick- but not too much. The protein often varies by region, and can include beef, goat, or even camel. Chicken is among the most common, though, and it's what we've stuck to here. We'll save the camel for next time.The spices are the star of the show in these Middle Eastern dishes, which use varied seasonings to create wide arrays of amazing flavor. Black lemon, or loomi, makes this simple chicken and rice version a standout. We toast the spices and pan seared chicken thighs to enrich the broth for the rice. The resulting Kabsa has many layers of flavor and makes an amazing one-pot dinner for a large group or family!

It's no secret that flour tortillas are champions of versatility! You can top them with anything, fill them with anything, and they work great for snacks or for meals. What's less well known, however, is that they're also incredibly easy to make! Really! And nothing beats a fresh, warm tortilla.When making tortillas at home, use the opportunity to be creative! By using different spices or flours, you can inject a little flair into your recipe, and make your tortillas truly unique! In this recipe, we use Saffron and Butterfly Pea Flower to give our tortillas unique and distinctive colors. You can substitute a portion of the all-purpose flour for other flours, too, for more flavor and texture variety.Recipes such as this one traditionally use lard, but we've found that vegetable oil makes a perfectly suitable substitution. It's easy to double or triple this recipe, and they'll keep in your refrigerator in an airtight container for a couple of weeks. Homemade tortillas are best when fresh, though, and we don't think you'll have any problem finding ways to use them!

Rich, hearty, long-simmering stews, soups, and braised meats can be the perfect accompaniment to a cozy night indoors by the fire or fortification to warm you from the inside when you have to brave the elements outdoors.To beat the winter blues, I like to crank up the rumba, turn on the sun lamp, and make a big pot of black bean soup with Cuban Spice, while day dreaming about a Havana vacation. Our Cuban Spice adds a bright flavor to hearty ingredients like black beans and ham, and brings them together with fresh ingredients . Although this recipe is very mild, it takes a few hot peppers quite well for those of us looking for a little extra zing.

This Mediterranean spice mix has all of those garden herbs, as well as sumac and lemon peel for acidity. The flavor pairing is perfect for baked goods: rich and comforting, but not overly heavy. They also make the perfect side for a soup or salad... if they last until lunch!

Goulash is a big bowl of comfort! We used Hungarian Paprika and Caraway Seed to make this rich tomato beef stew. Hungarian Paprika is bright and mildly sweet, while the Caraway Seed is nutty and earthy. Both of these serve as an excellent base to bring out the hearty flavors of the beef and the tomato's umami character. When you're looking for something rich and flavorful, goulash is a perfect answer. This meal is made of kitchen staples, which is perfect for when you have no idea what to cook. Chances are, you've got most of the ingredients already on hand! Goulash is delicious with your carb of choice. Potatoes, pasta, rice or root vegetables all work equally well. For our photo-shoot, we used egg noodles as a family favorite.
