Our favorite Mediterranean flavors collide in this stupidly simple sheet pan dinner, which you can prepare in 30 minutes or so.  Admittedly, you'll spend a bit of time chopping, but who can complain when the result is all this veggie goodness? The leeks give the meal a mildly sweet, onion-like flavor and the spices—Provencal Seasoned Salt, El Greco, and Aleppo Pepper—make an herby and salty combination with a slight fruity heat that adds beautiful depth to the flavor. Slow Roasted Leg of Lamb with Orange-Rhubarb Glaze

Give boneless leg of lamb the royal treatment with Ras El Hanout and Moroccan Meyer Lemon Paste. Ras el Hanout is the spice merchants showcase of their finest flavors, and ours is a blend of 24 spices with sweet and savory, piquant and floral notes blended to perfection. Combined with Moroccan Meyer Lemon Paste, and marinated overnight, it is an easy prep for this slow roasted leg of lamb. For a stunning sauce to finish the dish, we made a jammy glaze with rhubarb and honey, orange and mint to elevate the flavors with fresh seasonal ingredients. Besar Cranberry Chutney

The rich and toasty taste of our Besar blend makes an ideal complement for the pop of fresh cranberry in this exotic twist on a holiday classic. It's easy to fall in love with a delicious recipe, and doubly so when that recipe is versatile and easy to make. Such is the case with this recipe Rose Water & Orange Blossoms, by Maureen Abood. This versatile mixed pickle jar, can easily accommodate whatever vegetables you happen to have on hand.  From the Author: "Mixing vegetables in one jar is a great way to make use of a variety of vegetables you may have on hand, and they look just great in the jar. Fried Potatoes with Harissa Tehina

Zahav is a popular Middle Eastern restaurant in Philadelphia, and its owner Michael Solomonov wrote a fantastic cookbook using recipes that he serves at the restaurant, as well as at his home. Cowritten by James Cook, Zahav: A World of Israeli Cooking reinterprets the type of Israeli Cuisine served at the restaurant, but makes it more manageable for American kitchens. We're especially excited about this inventive recipe for fried potatoes using Harissa, a perennial favorite here at the shop!From the Authors: "This dish happened by serendipity. At Zahav, our Israeli pickles come packed in huge cans with a ton of excess pickle juice. One day, in a passion for brining, I decided to throw some peeled potatoes into that leftover pickle juice. A day later, I drained and fried the potatoes, ending up with the most amazing French fries ever. The potatoes were seasoned from within with a garlicky tang from the pickle juice. Deep-frying can be an undertaking, so when I make this dish at home, I just slice the potatoes into rounds and pan-fry them on both sides in a cast iron skillet until they’re nice and crispy. I serve the potatoes with tehina augmented with harissa, the North African condiment based on dried chiles that’s a staple on the Israeli table. In my harissa, I use ground Aleppo pepper from Syria, which has a fruity flavor and is not screamingly hot, so you can appreciate the pepper’s earthy undertones. I thin the sauce with a little more pickle juice to cut through the richness and echo the flavor of the potatoes. I’ll bet there’s a jar in your fridge, with a lonely pickle or two bobbing in a sea of brine. This recipe is the perfect way to put those pickles out of their misery."

Shakshuka

Shakshuka is a Middle Eastern dish that is quick and easy to make, and can be served for any meal. Our favorite occasion is always brunch with friends, though, because it's such a crowd pleaser. This versatile recipe is traditionally seasoned with cumin and paprika, but you can use just about any spice blend that suits your fancy. For this one, I used our El Greco, with Mediterranean herbs and a hint of sumac. To top it off, I added chopped spinach and feta cheese to the sauce.

Hawk Wings

These sweet and spicy wings are just the ticket to victory on the table, and we plan to enjoy them by the heaping helping as we cheer on our team. They are easy to make, too, so you don’t have to spend much time in the kitchen. Seattle Salmon Rub is good on all kinds of things - not just salmon - and we’ve taken advantage of that to create this special Hawks-fan fare. Combine the pan-Asian flair of the spice rub with sweet orange and maple and a kick of heat from Aleppo and you’ve got a winner. This recipe is also good using boneless skinless chicken thighs, too! GO HAWKS!!!!

Aleppo Pepper Basil Lemonade

Now that the 4th of July has passed, summer has truly begun in Seattle. The sun is shining, the BBQ is fired-up, and a wild game of badminton is underway. The players and onlookers are thirsty, and I've got just the thing. This refreshing lemonade is perfect for hot summer afternoons like these. The soothing taste of fragrant basil and the zesty flavor of ruby-red Aleppo Pepper create a delicious, thirst quenching treat. The simple syrup can be used to make wonderful cocktails as well.
