Rocky Mountain Pork Loin & Savory Applesauce
Early Fall harvest provides a perfect menu to highlight our Rocky Mountain Rub. Toasted juniper with notes of citrus and pine combine with oregano and savory, black pepper and allspice to give a taste of the mountain high country. Rubbed on pork tenderloin and served on a bed of vinegar-massaged kale and savory applesauce, it makes a hearty meal that is light enough for early fall days. It still hints at summer. The applesauce is a show stopper in its own right, seasoned with brown butter and Poultry Rub. The batch we made for this recipe is pretty big thanks to an abundance of apples in our orchard, and it can be canned to last. If you don't have the volume, just pare it down to make enough for this delightful meal. A quick sauté of crispy leeks with butter and Rocky Mountain Rub is the perfect garnish.

Kala Masala is an Indian spice blend, named for the dark color of its ingredients, which are often toasted before use. Sweet spices like Cloves and tangy Amchoor make this blend an excellent seasoning on seafood, and especially good on shellfish.We used Kala Masala as the signature flavor in these shrimp cakes, which have sweet potato and rice as the binder and a coconut crust. That also makes them gluten free, for those keeping score. The Rooster Spice aioli, which we whipped up as a dipping sauce, takes no time at all. It's spicy and just a little bit sweet: the perfect accompaniment to these tasty appetizers.

If you're not a fan of tofu, this salad may convert you. Tofu is a sponge and it takes on any flavor you marinate it in, so the right seasoning can totally transform this healthy protein. We spiced it up this time, and infused the tofu overnight in soy sauce, ginger, Korean Chile and garlic. The tofu then gets pan seared for crispy caramelized edges before adding it to the salad. A turmeric honey ginger vinaigrette dresses the peppery arugula and shaved carrots. A stunning garnish puts the final touch on this delicious dish. With a quick dusting of toasted sesame seeds and Pacific sea salt, the salad is complete.

Goulash is a big bowl of comfort! We used Hungarian Paprika and Caraway Seed to make this rich tomato beef stew. Hungarian Paprika is bright and mildly sweet, while the Caraway Seed is nutty and earthy. Both of these serve as an excellent base to bring out the hearty flavors of the beef and the tomato's umami character. When you're looking for something rich and flavorful, goulash is a perfect answer. This meal is made of kitchen staples, which is perfect for when you have no idea what to cook. Chances are, you've got most of the ingredients already on hand! Goulash is delicious with your carb of choice. Potatoes, pasta, rice or root vegetables all work equally well. For our photo-shoot, we used egg noodles as a family favorite.

Picadillo is a Latin comfort food with many regional variations. Every country has their own version, but ground meat, olives, capers, and raisins are all staples of the dish. Picadillo can be served as a standalone, stuffed inside savory pastries, or even be used as filling for tacos. We used our Cuban Spice as the principal seasoning in this picadillo, alongside white wine and olive oil in the traditional style. Cuban cuisine typically sees the dish served alongside black beans and rice. This recipe keeps the overall heat level low, so the dish is family friendly while still full of bold flavors.

Crusted with sumac and Alderwood smoked salt, this cauliflower steak is a healthy vegetarian entree full of texture and color. The dish is inspired by Mediterranean flavors that compliment summer vegetables, and it's accompanied by a hearty spelt grain salad tossed in El Greco Citronette. The salad has orange and lemon juice for acidity and garden herbs like oregano and basil. To finish the dish, we sprinkled on some chopped dried cranberries for tart and chewy sweetness, although dried tart cherries or dried blueberries would be delicious, too. This dish makes you feel like you're eating the rainbow!

This slow cooked brisket takes all day, but requires little more than patience to turn out a delicious meal with plenty left-over. Instead of traditional Texas-style seasonings, we prepped the brisket with a coating of mustard and our Asian Tea Rub, which is smoky and sweet with hints of orange and ginger. The smells coming from the oven will tempt you to peek and rush to the finish, but don't! The results will be worth the wait.

White BBQ Sauce? Yes, really! A base of vinegar, mayonnaise and horseradish whip together for a traditional southern sauce on smoked chicken. Add our Voodoo to the mix and you've really got some spell-binding flavor! For this recipe we've used the sauce to finish a spatchcocked roast chicken, seasoned with Smoky BBQ Rub and Meyer Lemon Paste. This meal is easy enough to roll out for a weeknight dinner and impressive enough for guests. Served with collard greens and mashed potatoes for a delicious down-home dinner.

To be clear, the origins of this recipe lie in the Eastern European country of Georgia, not the southern American state or the revolutionary era in Great Britain. This small country lies nestled between Azerbaijan, Russia, Armenia, Turkey and the Black Sea. Accordingly, its cuisine has been influenced by both eastern and western cultures, and nowhere is this more apparent than in the distinctive spice blend, Khmeli Suneli. Traditionally used in meat, grain or bean dishes, we're using it here to help liven up a traditional Georgian dish of chicken and sour cream, which you may recognize as a kind of Russian Stroganoff. We're deepening the flavor by adding mushrooms and some additional Hungarian Paprika, as well as a finishing touch of roasted walnut oil. Served over egg noodles, mashed potatoes or even cauliflower mash, you'll find this uniquely flavored dish a welcome addition to your recipe collection.
