Are you wondering what to do with all that turkey leftover from Thanksgiving? Gluten-free and altogether nommy, this is one of our go-to meals when the holidays are over, the leftovers are piling up, and no one has any desire to cook.

Full of delicious textures, every bite will play a bit different on your tastebuds. The chives in Emerald City Seasoning brighten up the entire dish while the mix of peppercorns give the dressing a surprising kick. You'll get that light feel of a salad even without any lettuce present, and it's easy to substitute raisins or fresh grapes for the dried cranberries to customize the dish as you please. 

This dish is simple, elegant, and makes the perfect post holiday snack.

Ingredients

For the dressing
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tablespoon apple cider vinegar or lemon juice
  • 1 tablespoon honey
  • 1 teaspoon chopped fresh thyme
  • 1 1/2 teaspoons Emerald City Seasoning
For the salad
  • 1 cup diced cooked ham or turkey breast
  • 2 large red apples, cored and chopped
  • 1 cups sliced celery
  • 1/2 cup lightly toasted pecans, roughly chopped
  • 1/2 cup dried sweetened cranberries

Directions

  1. Whisk together the mayonnaise, sour cream, cider vinegar, honey, and Emerald City Seasoning in a large bowl.
  2. In the same bowl add the salad ingredients: ham, chopped apple, celery, pecans, and dried cranberries. 
  3. Gently fold in the dressing.
  4. Refrigerate until serving.
