Oven-Roasted Corned Beef and Cabbage

Ingredients

  • 1 (5 lb) brined corned beef
  • 1 lb small whole carrots, peeled
  • 1 lb rainbow baby potatoes
  • 1 large head of cabbage, quartered
  • Water, as needed

Directions

  1. Preheat your oven to 325°F (163°C).
  2. Rinse the brined corned beef under cold water to remove excess salt. Pat it dry with paper towels.
  3. Arrange the peeled whole carrots, rainbow baby potatoes, and quartered cabbage in a large roasting pan. Make sure the vegetables are evenly distributed.
  4. Nestle the corned beef on top of the vegetables in the roasting pan, fat side up.
  5. Pour enough water into the roasting pan to just cover the vegetables, but avoid submerging the corned beef completely. This will help create steam during cooking.
  6. Cover the roasting pan tightly with aluminum foil or a lid. Place it in the preheated oven and roast for about 3 to 3 ½ hours, or until the corned beef is tender and can be easily pierced with a fork.
  7. After about 2 hours of cooking, check the tenderness of the corned beef. If it's still tough, continue cooking until it reaches the desired level of tenderness.
  8. Once the corned beef is tender, remove the roasting pan from the oven. Carefully transfer the corned beef to a cutting board and let it rest for a few minutes before slicing it against the grain.
  9. Arrange the sliced corned beef, roasted vegetables, and cabbage on a serving platter. Serve hot.
