Ingredients

  • 1.5 lb boneless skinless chicken breast
  • 2 tablespoons fresh ginger minced
  • 1 13.5oz can coconut milk
  • 1 cup white onion thinly sliced
  • 2 cups carrot, 1 inch cut at a bias
  • 3 teaspoons Pacific Flake Sea Salt
  • 2 tablespoons Indonesian Ayam, ground

For Serving
  • Cooked white rice
  • Cilantro, choppedLimes, halved
  • Jalapeno, thinly sliced

Directions

  1. In a crockpot, place the chicken breast, ginger, coconut milk, onion, carrots, salt, and Indonesian Ayam.
  2. Stir the ingredients until they are well combined.
  3. Set the crockpot to medium heat for 6 hours.
  4. After approximately 6 hours, the chicken will be fully cooked and immersed in the flavorful sauce. Use two forks to shred the chicken into bite-sized pieces.
  5. To serve, place the mixture over rice and generously sprinkle your favorite toppings on top.
