Directions

Fill a large pot with 1 quart of water and bring to a boil over high heat.

Cook the pasta for 10 minutes, stirring the pasta occasionally. Towards the end of cooking the pasta may appear as if there is not enough water. This is normal!

There should be about a ¼ inch of remaining pasta water at the bottom of the pan. Do not drain it.

Turn the heat down to medium low and stir in the gouda into the water and pasta mixture until dissolved. A creamy sauce should form in about 2 minutes.

Stir in the Nigella Caesar spice and butter.

Right before serving fold in the spinach. The dish is ready when the spinach has wilted.

Top the pasta with more grated cheese and serve immediately.
