The base of Worcestershire is tamarind which is sweet and sticky, which means that it hydrates easily and has a tendency to cake up. Be sure that you store this one in an airtight jar in a cool, non-humid environment. Once you open it, be sure not to leave it exposed to fresh air so you can keep it in its powdered form for as long as possible.
