Spice-Rolled Goat Cheese
Happy National Cheese Ball Day! This time-honored appetizer is a classic worthy of celebration so we've added a range of flavors to goat cheese with three of our favorite spice blends - Dukkah, Green Za'atar and Syrian Za'atar. Bold and spice forward, these cheese balls are easy to make and each one offers a different flavor. All pair well with goat cheese so pick your favorite or enjoy them all! Hazelnuts and toasted sesame add texture to our Egyptian Dukkah along with cumin, marjoram and thyme. Both of our za'atar blends have toasted sesame as well, but different spices. Green Za'atar is more herb forward with dill, thyme and hints of sumac. The Syrian Za'atar. has a larger measure of sumac along with coriander, cumin and hints of anise. Finish up this plate with crudité and this board will have a taste for every palate.
Learn moreEverything Bagels
Bagels require lots of processes. Kneading, boiling and baking, all for the holy grail of the perfect crust and chew. Our friend Dawn took on the challenge and made dozens of batches to dial it in just right. The results are a beautiful brown blush on perfect crust with a satisfying chew--and it's not hard! This recipe makes a dozen and I guarantee you they'll be gone before they cool.
Learn moreSpiced Monkey Bread
1 hr
Monkey bread is most often sweet, and served with a drizzle of syrupy glaze. Here we decided to give it a twist and make monkey bread that is salty, crunchy and savory. The soft, chewy rolls of dough are piled high and baked in a Bundt pan. To eat them you pick the pieces apart like a monkey! It's fun to eat and a festive addition to a potluck or holiday table. Serve the monkey bread with a sauce like sour cream, butter, marinara or olive oil. A small ramekin perfectly fits in the middle.
Learn moreGreen Za'atar Frittata
This recipes takes about 3 minutes and only dirties a couple dishes. Through out the year, this recipe evolves with whatever is in season and whatever veggies I have in my fridge. The foundation is always a light spritz of olive oil on my plate or bowl, eggs and a 2 minute cook. Once my eggs are 3/4ths of the way cooked, I load them up with veggies such as leftover tomato sauce and arugula. I finish the open faced omelet for another minute in the microwave and give my frittata a generous sprinkle of whatever spice I'm craving. Here I used our Green Za'atar, that has toasted sesame seeds, dill, oregano and sumac for a kick of tartness. Surprise your family with a perfectly cooked frittata that took as long as making your cup of joe.
Learn moreZa'atar Khachapuri
This popular Georgian pastry will soon become one of your favorite comfort foods! Khachapuri is a boat-shaped bread filled with cheese, egg, and other ingredients. After baking, the crust can then be ripped off and dipped into the filling. It's a perfect dish for brunch time cravings or a happy hour snack. This recipe combines a three cheese blend with Green Za'atar, a mix of toasted sesame seeds, thyme, sumac, dill and oregano. The grassy, nutty notes of the Za'atar neatly compliment the cheese and egg.Why stop there, though? One of the best qualities of Khackapuri is the endless flavor variations you can try. Try making this recipe with Syrian Za'atar or or Svaneti Seasoned Salt instead. This was our first Khachapuri attempt, but it certainly won't be our last.
Learn moreCrowd Pleasing Party Dips
Perfect for snacking or for parties, spiced yogurt dips are easy to make and keep well in the fridge for up to a week. One container of plain Greek yogurt or sour cream and 2-3 tablespoons of spice are all you need. Our seasoning blends offer a fresh flavor profile you won't find in the average packet. Our favorite is the Cascade Mushroom Mix because it has a strong dose of onion and garlic along with some powdered Worcestershire for a deep umami flavor.
Learn moreThackeray Ethiopian-Spiced Fried Chicken and Za'atar-Spiced Kale Slaw
A while back, we stopped for lunch at Thackeray restaurant and had a meal that totally blew us away. The lamb shawarma and Spanish prawn bowl were both fantastic, but the highlight for us was the Ethiopian-spiced fried chicken, served with a side of some simply amazing slaw. After our food coma faded, we reached out to Jon and Micah, to see if they'd share some of their secrets. They happily obliged, and we are happy to present the recipes for their fried chicken and side slaw, featuring Berbere and Green Za'atar to great success. Check out the recipe to try it at home and see for yourself what we are raving about.
Learn moreZa'atar Lamb Chops
This simple recipe is quick and flavorful. The classic combination of Green Za'atar and lamb is always a winner, and we've also paired both fresh and dried herbs in the marinade for maximum flavor. Oregano was the fresh herb of choice for this version, but rosemary, marjoram or a mixture would also be wonderful. Pick your favorite!
Learn moreBrussels Sprouts with Za'atar and Nigella
Brussels sprouts are a leftover food trauma from childhood that I've finally overcome. The limp, stinky-sulfur blobs (sorry, Mom) have been replaced with a crisp, roasted vegetable that is full of flavor and befitting a fall feast. Best of all, these are easy to make and a perfect vehicle for one of my favorite spice blends, Green Za'atar. The combination of herbs, sesame and sumac make this spice blend good enough to eat straight out of the jar, but it is even better on the brussels sprouts. A sprinkle of nigella seeds tops the dish off with an exotic garnish and a hint of nutty onion flavor.
