Ingredients

  • 1 pound rainbow carrots, peeled and sliced
  • 2 tablespoons olive oil
  • 1/2 teaspoon Pacific Flake Salt
  • 2 tablespoons Pink Chili Crisp
  • 1 tablespoon honey
  • 2 tablespoons roasted peanuts, chopped
  • 1 lime, cut into wedges
Garnish (Optional)
  • Carrot tops, chopped

Directions

  1. Preheat your oven to 400°F (200°C).
  2. Place the sliced rainbow carrots on a baking sheet. Drizzle with olive oil and sprinkle with salt. Toss to coat evenly.
  3. Roast the carrots in the preheated oven for 20-25 minutes or until tender and slightly caramelized.
