Homemade ice-cream is worth the effort, and a splash of vodka is hardly noticeable but makes all the difference in the consistency. Alcohol does not freeze, which prevents the consistency of the spun ice cream from freezing rock hard after being frozen. Perfect any time of the year, the flavor will have you making this recipe again and again.

Lavender and Vodka Ice Cream

Ingredients


For the Ice Cream:
  • 3/4 cup heavy cream
  • 1/2 cup whole milk
  • 2 eggs
  • 1/3 cup white sugar
  • 3 tablespoons honey
  • 2 cups buttermilk
  • 1/3 cup vodka
  • 1 teaspoon Lavender, ground

For the Garnish:
  • More Lavender!

Directions

In a saucepan add the heavy cream and milk and bring to a simmer.

In a bowl whisk the eggs and sugar until a pale yellow.

our the simmered milk slowly into the egg mixture and whisk constantly.

Place the bowl over simmering water and whisk until the mixture reaches 175 with a candy thermometer.

Take the bowl off the heat and add the honey until dissolved.

Add the buttermilk, vodka and lavender.

Add the ice cream base in a plastic container and cool in an ice bath. Refrigerate overnight, then spin in an ice cream machine. 25-35 minutes.


Notes: 

The vodka keeps the ice cream from turning rock hard.
