Ah, this toast—a flavor symphony that will make your taste buds sing. Smoky, delicate salmon, paired with the bitter bite of greens and the velvety richness of creamy cheese, all perched atop crispy, crunchy bread.

To really amp up the decadence, you'll want to layer the ingredients generously, pushing down with a ramekin or using your fingers to ensure every inch of bread is covered in savory goodness. And here's where it gets really indulgent - two golden egg yolks, perfectly nestled on top to act as a built-in sauce that will ooze and meld with the other ingredients as it bakes.

And the finishing touch? The crowning glory? A generous sprinkle of Everything Bagel Spice, lending a bright, savory depth to this already complex and delightful dish.

Pop it all in the oven and wait for the magic to happen—those yolks will blister and bubble, creating a mouth-watering texture that perfectly complements the flavors below. One bite of this toast, and you'll feel like you're sitting in a cozy Parisian café, savoring every morsel of this decadent treat.

Ingredients

  • 1 slice of thick soft bread
  • 2 teaspoons olive oil
  • 2 ounces cured smoked salmon, sliced 
  • 1/2 cup baby arugula
  • 1 provolone cheese slice
  • 2 egg yolks, whole
  • 1/4 teaspoon Everything Bagel Spice 

Directions

Preheat oven to 425°F and prepare a sheet pan by spraying it with pan spray.

Using the back of a spoon or ramekin, press into the center of the bread to indent and create a well without cutting all the way through. Leave about a quarter inch border around the edge of the toast, this will create a bed for the toppings. .

Evenly shingle the thinly sliced cured smoked salmon on the toast. 

Mound the arugula in the center and place the slice of provolone cheese on top.

Place the loaded toast on prepared sheet pan and bake for 3 minutes or until the cheese has started to melt.

Remove the toast from the oven. Using a spoon press into the center of the bread to create and indention. Gently place the two whole egg yolks in the center and drizzle them with the olive oil. This step is important or the egg yolks will wrinkle as they bake.

Sprinkle Everything Bagel Spice on top.  Bake the toast for 3-5 minutes or until the yolks are cooked to your  preferred doneness. 

Serve immediately.
