Piquant and smoky, without being too much of either, these chiles can be used in soups and stews, sauces and more. If you've never used them, this dip is a fantastic introduction. Pasilla Oaxaca chiles are dried smoked chilaca peppers. They have more heat than their ancho pepper siblings, but less than chipotle, they are smoky and have a great depth of flavor. Just pop one of these in while the beans are cooking, then blend it all up for this creamy dip. Tasty hot or cold, this dip is delicious.

The batch we made for this recipe is pretty big thanks to an abundance of apples in our orchard, and it can be canned to last. If you don't have the volume, just pare it down to make enough for this delightful meal. A quick sauté of crispy leeks with butter and Rocky Mountain Rub is the perfect garnish.

As the days are getting shorter, the air is getting colder, and here in Seattle the sun is making fewer and fewer public appearances. It can be easy to get lost in the gloomy grey blanket of winter in the Pacific Northwest (I know I'd rather be on a beach), but winter does bring the time for some of my favorite meals. Rich, hearty, long-simmering stews, soups, and braised meats can be the perfect accompaniment to a cozy night indoors by the fire or fortification to warm you from the inside when you have to brave the elements outdoors.To beat the winter blues, I like to crank up the rumba, turn on the sun lamp, and make a big pot of black bean soup with Cuban Spice, while day dreaming about a Havana vacation. Our Cuban Spice adds a bright flavor to hearty ingredients like black beans and ham, and brings them together with fresh ingredients . Although this recipe is very mild, it takes a few hot peppers quite well for those of us looking for a little extra zing.

Hungarian Paprika is bright and mildly sweet, while the Caraway Seed is nutty and earthy. Both of these serve as an excellent base to bring out the hearty flavors of the beef and the tomato's umami character. When you're looking for something rich and flavorful, goulash is a perfect answer. This meal is made of kitchen staples, which is perfect for when you have no idea what to cook. Chances are, you've got most of the ingredients already on hand! Goulash is delicious with your carb of choice. Potatoes, pasta, rice or root vegetables all work equally well. For our photo-shoot, we used egg noodles as a family favorite.
