Chocolate-Covered Cherries with Sea Salt

Ingredients

  • 1 pound fresh cherries, washed and dried (with stems on)
  • 8 ounces dark chocolate (70% cocoa or higher), chopped
  • 1/2 teaspoon Pacific Flake Sea Salt, for garnish
  • 1/2 teaspoon Alderwood Smoked Salt, for garnish

Directions

  1. Prepare the Cherries: Ensure the cherries are thoroughly washed and completely dry. Any moisture can cause the chocolate to seize.
  2. Place the chopped dark chocolate in a microwave-safe bowl. Microwave the chocolate on medium power (50%) in 30-second intervals, stirring after each interval, until the chocolate is completely melted and smooth.
  3. Holding a cherry by the stem, dip it into the melted chocolate, covering it almost entirely. Allow any excess chocolate to drip off back into the bowl. Place the dipped cherry on a parchment paper-lined baking sheet. Repeat with the remaining cherries.
  4. While the chocolate is still wet, sprinkle a small amount of Pacific Flake Sea Salt and Alderwood Smoked Salt over each chocolate-covered cherry. Be careful not to overdo it; a little goes a long way.
  5. Allow the cherries to sit at room temperature until the chocolate is set. Alternatively, you can place the baking sheet in the refrigerator for about 15-20 minutes to speed up the process.
  6. Once the chocolate is fully set, transfer the cherries to a serving platter or store them in an airtight container in the refrigerator.
