As autumn paints the world in warm hues, it brings with it the harvest of a rather underrated and mysterious fruit – the quince. With a unique flavor profile that marries the sweetness of apples and pears, embellished by a delicate floral note, and capped off with a pronounced sour finish. Once cooked, they transform into a luscious, sauce-like texture, and thanks to their high pectin content, they become candy-like, reminiscent of jelly. But what makes these Quince Fruit Roll-Ups truly special is the infusion of Pumpkin Pie Spice. While this blend is often paired with creamy, rich desserts, we're here to prove that its warm and aromatic goodness can shine in fruity confections. The nutmeg, mace, and orange in the blend add a zesty, citrusy finish, while the cinnamon undertones beautifully balance the natural acidity of the fruit. Ingredients

1.5 pounds of quince, seeded and chopped


2 cups of sugar


2 cups of orange juice


1 teaspoon of pumpkin pie spice

Directions

  1. Start by preparing the quince. Peel and core the quince, then chop it into small pieces.
  2. In a large saucepan, combine the chopped quince, sugar, orange juice, and pumpkin pie spice.
  3. Place the saucepan over medium-high heat and bring the mixture to a simmer. Stir occasionally to ensure the sugar is fully dissolved.
  4. Let the mixture simmer for about 30 minutes or until the quince becomes tender and the mixture thickens to a jam-like consistency.
  5. Once the quince mixture is ready, remove it from the heat and let it cool slightly.
  6. Using a blender or food processor, puree the quince mixture until it's smooth and well combined.
  7. Preheat your oven to 170°F (75°C) and line a baking sheet with parchment paper or a silicone matt.
  8. Pour the quince puree onto the prepared baking sheet, spreading it evenly to create a thin layer.
  9. Place the baking sheet in the oven and dehydrate the quince puree for approximately 7 hours, or until it becomes dry and pliable.
  10. Once the quince fruit roll-up is ready, remove it from the oven and let it cool.
  11. Cut the cooled quince fruit roll-up into strips and roll them up. You can also use parchment paper to prevent sticking.
  12. Your homemade Quince Fruit Roll-Ups are now ready to be enjoyed as a sweet and naturally fruity snack!
