The Yucatan Rojo BBQ Rub is inspired by the cuisine of Mexico's Yucatan Peninsula, where annatto seeds have been a cornerstone of local food for centuries. Annatto, known for its vibrant red color and slightly nutty, sweet flavor, is often used to prepare achiote paste, a key ingredient in many Yucatan dishes. Historically, this paste was used by the Maya for both culinary and ceremonial purposes, including as a body paint. The use of annatto in cooking is particularly prevalent in the preparation of cochinita pibil, a slow-roasted pork dish that is a hallmark of Yucatan cuisine.
