Vadouvan Paste
Vadouvan Curry is a spice blend with South Indian and French influences, and the name means "sun-dried spices" in French. This fusion blend can be used just like a curry powder, or made into the iconic Vadouvan paste, a rich blend of onion, shallots and aromatics.Making Vadouvan paste takes a little doing, but is worth the effort. Some some specialty shops sell the paste for $100 per pound! A little does go a long way, and the paste is a wonderful short-cut to add fully developed curry flavors into your dish in an instant. The flavor is bold and subtle at the same time, with a meaty base surrounded by an intricate spice melange. Sri Lankan Sweet Potato Pie
Our holiday motto? Don't skimp on the sweets! And add ambrosial spices whenever possible... As such, this incredible sweet potato pie is a must for our Thanksgiving menu because it does both. We adapted this recipe to feature our Sri Lankan Curry, which has none of the savory turmeric that we often expect in our curries, but is instead made up of a melange of warm, sweet spices. Each component is individually toasted before being mixed in perfect proportion, yielding an intensely dark and aromatic blend so intoxicating that most customers who give it a whiff can't leave without it. The sweet potatoes are a perfect canvas for the deep, toasted flavors of the spice, with just a pop of orange zest added for contrast. The crust is a dense, almost shortbread-like shell made with chopped pecans for a special crunch. This pie will please all who grace your autumn table!

The extra effort and attention that goes into making these beautiful tea sandwiches shows in every detail — the sweet shapes, the colorful combinations and, as always, the thoughtful flavor pairings. Make a platter for friends or a plate for yourself and enjoy a lazy summer picnic while the weather is fine. Since we're taking this picnic over the top, we've suggested some tea pairings as well. You can check out easy methods for cold brewing here!A bold curried egg salad is seasoned with our French inspired Vadouvan Curry, served on whole wheat bread and a cherry tomato topper. The flavor is deep and rich in this toasted blend with cumin, cardamom, mustard seeds, black pepper and fenugreek seeds. With a squeeze of lemon juice and watercress, these sandwiches go great with a malty Indian black tea like our Keemun black tea. For a cooling crunch with spectacular flavor, we seasoned the cucumber sandwich with our Orange Tarragon. This blend has chives, shallots, garlic and black pepper, adding many layers of flavor to the cream cheese spread complimenting the cucumbers. These cucumber sandwiches are anything but boring! Pair them with a cup of Rwandan Green Tea which is a vegetal green tea that will cut through the rich cream cheese and compliment the cooling cucumber. Because no picnic is complete without dessert, we made a sweet finish, open-faced mascarpone sandwiches. The creamy mascarpone gets its speckles from Madagascar vanilla beans that not only smell amazing, but go great with berries and a sprinkle of lemon zest. To finish off our tea picnic we paired a bold cup of Earl Grey with this sandwich. This classic tea is scented with bergamot, a perfect combo with the vanilla bean and sweet blackberries.
Cold Ayam Apple Soup
One of the advantages of this soup is the fact that you can make it ahead of time and it’s ready to eat whenever you are. Or wherever you are, seeing as this is a quintessential British picnic dish meant to be served cold. The Indonesian Ayam gives it a gentle curry-like flavor, but without too much heat. As for the apples, I like to use both Granny Smith for their tartness and a second variety that brings more sweetness to the dish, but feel free to use all sweet apples or your favorite varieties. As always, feel free to play around with the ingredients! You can substitute vegetable broth for the chicken, or choose between the cream or the yogurt for the finish. If you use the yogurt, which will add more tang, then go lighter on the lemon juice.

February 4th is National Ice Cream for Breakfast Day. If you're not making your ice cream into SPICE cream, you're definitely missing out. Here are some of our favorite (and unexpected!) flavor combos for you to try at home.With Vanilla: Madras Curry may surprise you as a pairing for ice cream (it surprised us too!) but once you taste it, it's impossible to deny. The bright pop of ginger and warm hint of cinnamon make it an ideal topping for vanilla. The two flavors combined will leave you with a slight hint of citrus on your tongue. Hojicha is a roasted green tea finely milled that brings a smooth, earthy, and nutty flavor to your bowl of vanilla. It's the perfect way to start the day! Cinnamon Toast Spice is such an obvious winner on vanilla ice cream, you're probably wondering why you hadn't thought of it yourself! The warm flavors of cinnamon, nutmeg, and brown sugar pair well with your ice cream while evoking all the flavors of your favorite breakfast. With Chocolate: Kashmiri Garam Masala is deep and dark roasted with warm spices like cinnamon. Cloves make this blend intensely flavorful. Mouth wateringly aromatic, our Garam Masala brings out the best in chocolate. Alderwood Smoked Salt has an incredible amount of flavor in a single ingredient! A stack of these cookies wrapped up with string makes a quaint gift, and happens to be exactly how we first came to try them.Since our first encounter with these cookies, we've played with different flavors and shapes. Of all our experiments, the most successful added Kala Masala to the cookie dough. Masala blends are usually quite versatile and deserve to be played with in more than savory dishes. Our Kala Masala blend has warm spices like coconut, clove, cinnamon and star anise. The almonds in the Pain d'amande are a perfect vehicle for all of these spices, giving them a gently sweet base flavor upon which they can shine.
