Crispy Tofu Salad with Turmeric Honey Ginger Vinaigrette

If you're not a fan of tofu, this salad may convert you. Tofu is a sponge and it takes on any flavor you marinate it in, so the right seasoning can totally transform this healthy protein. We spiced it up this time, and infused the tofu overnight in soy sauce, ginger, Korean Chile and garlic. The tofu then gets pan seared for crispy caramelized edges before adding it to the salad. A turmeric honey ginger vinaigrette dresses the peppery arugula and shaved carrots. A stunning garnish puts the final touch on this delicious dish. With a quick dusting of toasted sesame seeds and Pacific sea salt, the salad is complete.

The dirty martini, made by adding olive brine to the traditional recipe, is a well-loved twist on a classic cocktail. For a twist on a twist, we created this concoction which uses pickled spruce tips in addition to the usual garnish.To pickle the spruce tips, we used an infusion of Green Peppercorn, Black Vietnamese Peppercorn, and Long Pepper. The combination adds a spicy and savory punch to the natural flavor of the spruce tips. With so many strong flavors at play, it made sense to opt for a vodka martini over gin, to avoid adding the intensity of juniper to the mix.The final result is a bold martini that combines woody aromatics with rich briny notes and a slight peppery bite. To be clear, the origins of this recipe lie in the Eastern European country of Georgia, not the southern American state or the revolutionary era in Great Britain. This small country lies nestled between Azerbaijan, Russia, Armenia, Turkey and the Black Sea. Accordingly, its cuisine has been influenced by both eastern and western cultures, and nowhere is this more apparent than in the distinctive spice blend, Khmeli Suneli. Traditionally used in meat, grain or bean dishes, we're using it here to help liven up a traditional Georgian dish of chicken and sour cream, which you may recognize as a kind of Russian Stroganoff. We're deepening the flavor by adding mushrooms and some additional Hungarian Paprika, as well as a finishing touch of roasted walnut oil. Shrimp Fra Diavolo

Fra Diavolo translates as “Brother Devil”, and refers to this spicy, tomato and seafood-based pasta dish. The tomato sauce is light, perfect for spring and the Marash Chile Flakes add a mellow heat with well rounded flavor that plays perfectly with the sweetness in the vegetables. The gentle, warming heat increases upon reheating, so keep that in mind if you’re planning for leftovers.I’ve been making this dish for many years, but only recently came across a technique that really helps bump up the flavor. More advanced cooks are well aware of how to coax the maximum amount of flavor from shrimp by utilizing the peeled shells, and now I do the same. It’s really not that difficult, and it’s amazing the difference it makes to the dish. Most Fra Diavolo recipes call for a long noodle such as linguine or spaghetti, but I prefer a corkscrew-shaped pasta, or any other shape with crevices that can capture and hold onto the sauce. Regular or gluten-free pasta works equally well here.
