Biscayne Corn Chowder

Biscayne Corn Chowder

Bright and spicy, this corn chowder is bursting with Caribbean flavor. Our Biscayne Citrus Rub is featured here, packed with spices like thyme, oregano, chile flakes, and citrus peel to bring out the natural sweet flavor of the corn. Smoked ham gives this chowder a meaty flavor, and the corn is grilled to bring a bit of fiery flavor. To get a perfect texture in this chowder, the ham and vegetables should be uniformly diced small. Cubes of about 1/4 inch work well. Aside from a bit of chopping, this dish is quick and easy to bring together. It's perfect as a side dish for a backyard summer bbq or a low-maintenance weeknight meal.

Sumac Cauliflower Steak with El Greco Spelt Salad

Sumac Cauliflower Steak with El Greco Spelt Salad

Crusted with sumac and Alderwood smoked salt, this cauliflower steak is a healthy vegetarian entree full of texture and color. The dish is inspired by Mediterranean flavors that compliment summer vegetables, and it's accompanied by a hearty spelt grain salad tossed in El Greco Citronette. The salad has orange and lemon juice for acidity and garden herbs like oregano and basil. To finish the dish, we sprinkled on some chopped dried cranberries for tart and chewy sweetness, although dried tart cherries or dried blueberries would be delicious, too. This dish makes you feel like you're eating the rainbow!

Raw "Couscous" Cauliflower with Almonds, Dried Cherries, and Sumac

Raw "Couscous" Cauliflower with Almonds, Dried Cherries, and Sumac

Winner of a James Beard Award Best Book in Vegetable-Focused Cooking and topping many "Best Cookbook of the Year" lists, Six Seasons: A New Way with Vegetables highlights the evolving attributes of vegetables throughout their growing seasons - from spring to early summer to midsummer to the abundant harvest of late summer, then ebbing into autumn and, the the earthy mellow sweetness of winter.Joshua McFadden, chef and owner of renowned trattoria Ava Gene’s in Portland, Oregon, is considered to be a "vegetable whisperer", and has learned to appreciate every part of the plant and how to get the best from vegetables at every stage of their lives. Each chapter begins with recipes featuring raw vegetables at the start of their season, progressing to sautés, pan roasts, braises, and stews. We think you'll enjoy this Raw "Couscous" Cauliflower with Almonds, Dried Cherries and Sumac - it tastes as good as it looks! From the author: "In this dish, I crumble the raw cauliflower so that it has the look and texture of couscous—it’s easy and unexpected and makes you think of cauliflower in a whole new way. If you can’t find dried tart cherries, use golden raisins or even chopped dried apricots; the idea is to have a sweet-tart and chewy element as contrast to the granular vegetable. And be sure to dress and season this salad generously. Underdressed, it risks being dry."

Chole

Chole

We loved Chetna Makan on "Great British Bake Off" and her first cookbook, The Cardamom Trail was full of many flavorful and stunningly photographed dishes. For Chai, Chaat & Chutney: a street food tour through India, she returned home to India and the street food that she grew up on. The book has four chapters that are organized by cities that make up the four corners of India - Chennai, Kolkata (formerly known as Calcutta), Mumbai and Delhi. The fifth chapter? All masala and chutney recipes. Some recipes will look or sound familiar, others will not...but the photos and descriptions of the food will make you want to eat (or drink!) all of them. If you love Indian food or any form of street food, this is the cookbook for you! This recipe is a wonderful example how curries in the North of India use lots of fragrant and aromatic spices to make this mouth-watering vegetarian curry made with chickpeas. From the author: "One of the ultimate curries of the North, this chickpea curry is often paired with Bhatura, a deep-fried flatbread sold piping hot originally on the streets of Delhi but, now, all over the country. This combination should be on everyone’s must-try list when visiting India. You can keep it light by eating this curry with rice or chapatti, if preferred."

Beef and Bean Taquitos with Avocado Sauce

Beef and Bean Taquitos with Avocado Sauce

'Tis the season for hosting parties. While sometimes that can be a bit stressful, the experts at Cook's Illustrated have come out with this book of 75 "only the best" appetizer recipes to reduce some of the stress. All-Time Best Appetizers Cookbook makes it easy to create a spread with everything from things that can be dipped, spread, or eaten by the handful to two-bite treats. These Beef and Bean Taquitos with Avocado Sauce are great for any get together...or for a "finger food" dinner. From the authors: "Why this recipe works - Making crunchy, golden taquitos is easy for restaurant cooks with access to a deep-fryer; our goal was to make them foolproof for home cooks, too. Adding mashed pinto beans to a seasoned ground beef filling and rolling the taquitos tightly helped the filling hold together. Sealing the edge with egg wash offered extra insurance, and frying in a mere cup of oil prevented the taquitos from unrolling as they cooked."

Shawarma Chicken Salad

Shawarma Chicken Salad

Shawarma Chicken Salad brings exotic taste to a familiar recipe. Our Shawarma Spice boasts powerful flavor that mimics spit roasted goodness at its best, and grilled chicken is a delicious way to enjoy it. We've been grilling so much I found myself with leftovers and this happy accident was born. The shawarma chicken salad combines all the great flavors of a sandwich, but without the bread. For this salad we chose to keep it light, but add hot sauce and olives if you like those, or a side car of hummus to round out the meal.

Chimichurri Flank Steak

Chimichurri Flank Steak

2 hrs, 10 min

Our Chimichurri Spice combines a whole lot of flavors: the almost apricot flavor of aji mirasol chiles, the peppery sweetness of guajillo and New Mexico chiles, and the earthiness of oregano, cumin and bay. Together, they're an ideal flavor base to make Chimichurri sauce. Just mix it with lots of fresh herbs, citrus, plenty of garlic, vinegar and oil. You'll have a sassy sauce that begs to be put on.....everything!When used as a marinade, the grill fire tames the acidity of the vinegar, enhances the sweetness of the citrus, and intensifies the heat of the chiles. Use another drizzle of sauce to make any cut of meat, beef especially, perfectly balanced. Chimichurri gives that sweet-tart-spicy-meaty union that screams "summer food" the world over. The flavors of this sauce meld together over time, so keep some in the fridge all summer long. You can vary the selection and proportion of herbs in this recipe in so many fun and tasty ways. Increase the herbs for a thicker consistency to use for dipping and topping or play with oregano, marjoram or whatever is fresh in your market or garden.
