  • 12 brioche dinner rolls
  • 2 cups half and half
  • 1 cup pumpkin puree
  • ½ cup brown sugar
  • ¼ cup melted butter
  • 4 eggs
  • 2 teaspoons Pumpkin Pie Spice

  1. Preheat your oven to 350°F (175°C).
  2. Grease your baking dish with butter or cooking spray.
  3. Place the whole brioche dinner rolls in the prepared baking dish in a single layer.
  4. Using a paring knife or fork randomly poke several holes into each roll, this will help the custard absorb through the brioche evenly.
  5. In a mixing bowl, whisk together the half and half, pumpkin puree, brown sugar, melted butter, eggs, and pumpkin pie spice until well combined.
  6. Slowly pour the pumpkin custard mixture over the brioche dinner rolls, ensuring all the rolls are evenly coated.
  7. Gently press down on the rolls with a fork or spatula to help them absorb the custard mixture. Allow the mixture to soak for about 15-20 minutes, giving the bread time to absorb the flavors. (I placed a plate on top of the soaking buns to help submerge them in the custard.)
  8. Place the baking dish in the preheated oven. Bake for 45-50 minutes or until the French toast bake is set and the top is golden brown.
  9. Serve the bake alongside maple syrup and your favorite nuts or fruits.
