Perfectly Portioned Salted Brownie Bites

Ingredients

Directions

  1. Preheat the oven to 350°F and line a 12 cupcake tray with cupcake liners. Pan spray the pan so the brownie tops don’t stick once baked. 
  2. In a medium saucepan, melt butter over medium-low heat. Increase to medium heat and simmer, stirring with a heat-resistant spatula while the butter bubbles and pops.
  3. Continue cooking and stirring, scraping up any brown bits that form in the bottom of the pan, until the butter is golden yellow.
  4. Remove from heat and stir in the chocolate chips. The mixture will be thin and shiny.
  5. Incorporate the flour and cocoa and stir until all combined. 
  6. Combine white sugar, molasses, salt, eggs, vanilla, and instant coffee in a bowl and whisk until the mixture is pale yellow and is thick and fluffy, about 5 minutes. 
  7. Using a spatula fold in the warm chocolate-butter mixture. 
  8. Fold with a flexible spatula to make sure the batter is well blended from top to bottom. 
  9. Using an ice cream scoop or spoon pour the batter into prepared cups, to be filled about 80% of the way. Lightly garnish each brownie with pacific flake sea salt. 
  10. Bake until the brownies are glossy and soft to the touch, about 20 minutes. Cool to room temperature.
  11. Serve with vanilla ice cream or berries
