Adjika is a versatile spicy seasoning that originates from the country of Georgia and the Caucasus region. It’s a staple in Georgian cuisine, and is such an iconic Georgian seasoning that UNESCO designated it as part of Georgia’s intangible cultural heritage. Adjika is commonly used in either paste or powder form, and adds a delicious kick to any savory dish. It can be used in a marinade, as a rub for meat or fish, added to soups, sauces, a pot of beans, or even used as a condiment. A traditional Georgian Adjika paste uses red chiles, but you’ll also find green chile versions in that region, too. Some Adjika pastes will also include ground walnuts, as well.
