These delicate herbs give the broth a layered flavor and season the vegetables with a light touch. Every bite is a different texture with pops of salt from the capers. Learn moreCuban Spiced Black Bean Soup
As the days are getting shorter, the air is getting colder, and here in Seattle the sun is making fewer and fewer public appearances. It can be easy to get lost in the gloomy grey blanket of winter in the Pacific Northwest (I know I'd rather be on a beach), but winter does bring the time for some of my favorite meals. Rich, hearty, long-simmering stews, soups, and braised meats can be the perfect accompaniment to a cozy night indoors by the fire or fortification to warm you from the inside when you have to brave the elements outdoors. To beat the winter blues, I like to crank up the rumba, turn on the sun lamp, and make a big pot of black bean soup with Cuban Spice, while day dreaming about a Havana vacation. Our Cuban Spice adds a bright flavor to hearty ingredients like black beans and ham, and brings them together with fresh ingredients . Although this recipe is very mild, it takes a few hot peppers quite well for those of us looking for a little extra zing.

It's perfect as a side dish for a backyard summer bbq or a low-maintenance weeknight meal.
Learn moreHopi Beef Stew with Cornmeal Dumplings
When the weather starts to cool off, there's nothing quite so comforting as a hot bowl of chunky, homemade stew. This Southwestern style Hopi Beef Stew with Cornmeal Dumplings brings together some of the crops which originated in the Americas - squash, pumpkin, chile peppers and, most importantly, corn.Corn is considered sacred amongst the Pueblo and Navajo people, and plays an important role in their legends, ceremonies and daily lives. Most of us are used to only seeing yellow corn, but it also comes in a variety of colors, including red, blue and multi-colored. Here, we've combined yellow cornmeal along with other traditional ingredients and our own New Mexico Chili Powder, a mild, earthy blend of New Mexico chile, guajillo chile, paprika, cumin, garlic and onion. We've also included our own Alderwood smoked salt and, in the dumplings, some ground sage to bring a dash of Southwestern flavor.Recipe adapted from Marcia Keegan, "Pueblo and Navajo Cookery," Earth Books, 1977
