I've made this recipe for lentil loaf a million times. It is a go-to dish that keeps coming back around. Why? It's true the loaf is moist and flavorful, healthy, and satisfying. For a family that loves to experiment with new dishes, the fact that we keep coming back to this recipe is a testament to its greatness.Credit goes to The Simple Veganista and her perfectly proportioned recipe for The Ultimate Vegetable Lentil Loaf. We've barely adapted it here. For our tastes, the secret is in the sauce, a simple blend of balsamic vinegar, ketchup and maple syrup, that pairs perfectly with all manner of flavors in the loaf. For this recipe I made it with New Mexico Chili Powder and our new Garlic Salt, but Sassy Steak Spice and Creole Seasoning also work well.

A word of advice from a novice gardener: Carrots are much bigger than carrot seeds. Somehow, fifty-odd square feet of garden space doesn't seem like that much when it's being planted, but it can produce a surprising haul, most especially in the carrot department. Praise be that carrots are delicious, so their being excessively plentiful is a problem I'm thankful to have! This soup is hearty and delicious, made velvety by the soft puree of carrots, and the sunny flavors of Caribbean Curry. We've dressed it up a little with the prawns, but this soup can easily be made vegan by omitting them and using red miso paste in favor of the Worcestershire powder.

Creole-Spiced Coleslaw

I'll admit it... I was a little skeptical about developing a spiced coleslaw. Coleslaw is one of those things I've long appreciated for its' simplicity, but boy, have I been missing out! The depth of flavor added from the Creole Spice and the bold, assertive heat of the chile flakes and Piri Piri makes the cooling quality of the mayonnaise and crisp cabbage in this slaw even more pronounced and refreshing. The classic juxtaposition of creamy, tangy, and crunchy that we love in coleslaw still sings here, but is undeniably enhanced by the savory blend of bell pepper, celery, and onion in the Cajun 'trinity' tradition.This slaw is interesting and delicious enough to be served as a side dish alongside any grilled entree, or top off a juicy pulled pork or fried fish sandwich with a generous scoop. Be warned- you may never be satisfied by the original version again!
