Followed directions for 5 days on a 5 pound point brisket end then rinsed well twice and vaccum packed overnight. Placed half of onion on bottom of pressure cooker then placed beef in with one quart of beef broth with pickling spice packet. Cooked for 90 minutes using natural vent on cooker. Removed beef and wrapped in foil to rest. Placed carrots and medium yellow potatoes in pressure cooker for 30 minutes. Absolutely the best corned beef we ever had. We had planned on freezing half but the two of us ended up eating all 5 pounds in one evening. Hard to believe I had never made my own corned beef before in all my years but it is worth every minute of the work. Made a second one and then seasoned and smoked it and made a fantastic real east coast deli pastrami the following week. Easy to do just a little time consuming, be sure to turn every night during curing. With the corned beef and pastrami you can make a perfect New York Steamer sandwich and save the airfare to NYC.

This corned beef was amazing!!! Next time, I might do a 6 day brine instead of 5. And, next time I will split the brisket in half, use one portion for a slow-cooker corned beef and the other piece for pastrami (recipe at Leite's Culinaria).

Great cure, tenderness and color, but a bit too much cloves so that kind of gave it a spice taste that was unexpected. Thoroughly rinsed the brisket before cooking. Taste is good, but just a little different.

I enjoyed using this corned beef curing mix. I had and used a 3.5 lb brisket instead of the 5 lb recommended on the package. I left in the brine for a couple days longer than the instructions. Drained, rinsed and simmered it for somewheres around 3 hrs with provided seasoning packet, rough chop of a few veggies and garlic, water and a Guinness stout beer for cooking liquid. Cooked cabbage, carrots, potatoes, garlic and onions ect. the next day in half the corned beef braising juice and half unsalted chicken stock. Slow heated the brisket, baked some fresh soda bread and we feasted!!! Not a complaint from my friends and I do think a 5 lb brisket and only brining for 5 days would make it better. Perhaps even leave out the stout beer. I will definitely cook this again.

I am reluctant to say it but I was disappointed. The flavor was essentially all clove. The meat was tender but the result was not very good. I don’t associate such a heavy dose of clove with any corned beef I’ve ever had.
I can NOT say enough wonderful things about the new Corned Beef Cure & Cook Kit. It was so easy to complete the recipe and it was the most delicious Corned Beef that my family has ever had! ! I hope that World Spice will continue to make this product available to your customers for many years to come!

Gifted these wonderful packages to each of my three adult kids for Saint Patrick's day. We are all foodies and love to do the work. My late husband's company supplied meat to the historic delis and fine dining spots throughout the Los Angeles and remembered visiting Ben Canter weekly to pick up orders for the famous Deli. He usually found Ben brining the briskets while smoking a cigar....do ashes add flavor? All off this year's briskets were brined as per your instructions. Then each was boiled and finished in a different way. Each was spectacular and no one saved leftovers for me.
