Chicken & Dumpling Casserole
If you're looking for a not-too-guilty pleasure to enjoy on a cold winter night, look no further. This hearty dish satisfies all the comfort food cravings, and is made lighter but no less luscious with oat milk and gluten-free dumplings. Now let's talk dumplings, aka the best part. Dumplings are typically chewy nuggets of boiled biscuit dough, but when you stud them into a casserole instead, the result is moist and chewy on the bottom, fluffy in the middle and crispy on top. Win. Win. Win. Seasoned with Herbes de Provence, and paired with leeks, carrots and peas the casserole is somehow both hearty and beckoning to spring at the same time. Enjoy!

Irish soda bread is one of the easiest quick breads to make, and it's very adaptable. Whole wheat, oats and rye flours make this a hearty loaf. For this version, we added a full complement of umami with earthy Porcini Pieces mushrooms and our bestselling Cascade Mushroom Mix. From there, we wanted to add some chewy bites, so sweet dried apricots and tart cherries made it into the mix as well. If you don't have dried tart cherries, dried cranberries are equally delicious in this soda bread. The end result was a delicious and hearty bread to brighten your St. Patrick's Day celebration, or to serve with soups or stews.

The bright flavor of the Bulgogi Spice cuts through the nutty flavor of the buckwheat noodles for the perfect bite. The Korean chile flakes brings enough heat to the dish without overpowering it. This salad is perfect for lunch, as a side or add some protein and make it an entree.

We know it's wrong to have a favorite child, but Pasilla Oaxaca reigns as our favorite chile. Don't tell the others. They are great in their own ways, but Pasilla Oaxaca has it all. Piquant and smoky, without being too much of either, these chiles can be used in soups and stews, sauces and more. If you've never used them, this dip is a fantastic introduction. Pasilla Oaxaca chiles are dried smoked chilaca peppers. They have more heat than their ancho pepper siblings, but less than chipotle, they are smoky and have a great depth of flavor. Just pop one of these in while the beans are cooking, then blend it all up for this creamy dip. Tasty hot or cold, this dip is delicious.
