This luscious pepper flake from Turkey has an earthy, smoky edge that hints at chocolate and tobacco alongside a mild heat giving it a well rounded, complex flavor. Similar to Aleppo pepper in terms of heat level (and geography...the town of Urfa is only one mountain range away), it also has a wide range of uses and will enhance most any dish- sweet or savory.
The peppers are harvested and sun dried during the day and then wrapped to sweat at night to develop the depth of flavor. The peppers are then processed with olive oil and salt to create a smooth texture and punch of flavor.
Urfa biber, a captivating spice from Turkey, is renowned for its luscious, smoky flavor with subtle hints of chocolate and tobacco. This unique pepper flake carries a mild heat, making it a versatile addition to both sweet and savory dishes. Its complex flavor profile is developed through a traditional process where the peppers are sun-dried by day and wrapped to sweat at night, enhancing their depth of flavor before being processed with olive oil and salt for a smooth texture and flavorful punch.
Urfa biber, also known as Isot pepper, originates from the town of Urfa in southeastern Turkey. This region's unique climate contributes to the distinctive qualities of the pepper. Historically, Urfa biber has been a staple in Turkish cuisine, used to add depth and smokiness to meats, stews, and even desserts. The traditional method of curing the peppers—sun-drying by day and sweating in covered bags at night—dates back centuries, a technique designed to intensify the pepper's natural flavors and preserve its rich color and aroma.
We love Urfa biber for its ability to add a mysterious, smoky twist to our dishes. Its mild heat level coupled with the unexpected notes of chocolate and tobacco makes it a favorite. Whether we're sprinkling it on roasted vegetables, stirring into rich chocolate brownies, or rubbing onto grilled meats, Urfa biber never fails to impress with its deep, complex flavors.
Did you know that Urfa biber is often referred to as the 'nighttime pepper' due to its unique curing process under the cover of darkness? This not only enhances its flavor but also its mystique, making it a spice that's as intriguing as it is delicious. Try it in your next chocolate dessert and watch the magic unfold!

I've long been a fan of Urfa Biber. I always buy from World Spice Merchants. Here I used it in a crockpot full of homemade split pea soup. I love the richness it adds to a dish. I also used my newly purchased Turkish Bay leaves for an extra layer of flavor.
How do I love thee? Let me count the flakes!
Urfa Biber adds extra bounce sprinkled on, well, everything. Vegetables, fruits, yogurt . . . I keep exploring the depths of this spice. Load up your cart and hit check out.

We absolutely agree how good it is on or in, well, everything - both sweet and savory. I've only used it with fruit in baked goods (brownies, snacking cakes, muffins), but will have to try it with uncooked fruit now, too. And love the idea of using it with yogurt. Will definitely have to do that, as well.
I got my first order of Urfa Biber on recommendation when visiting world spice for the first time, now it’s o w if my go-to spices.

Urfa Biber is just such a great way to add flavor and a wee bit of heat to any sweet or savory dish. It's definitely a staff favorite!
Smokey and sweet, with just a touch of heat. Very similar to an Aleppo pepper.

Urfa Biber is definitely a staff favorite, and has a similar heat level to Aleppo and Marash chiles. Urfa is also delicious in both sweet and savory dishes.
I love to add this to soups and chilies for an added smoky layer. I used it recently in lentils, along with black cardamom pods.
Store owner replied:
It's such a great chile to add to soups, stews and any pot of beans. I often add it to scrambled eggs, pasta (especially mac & cheese), and it's positively divine in brownies. Really love the idea of using it with black cardamom pods in with lentils! Urfa and black cardamom are both so good in our Turkish Curry blend, too.
Unique taste. Flavorful, but not too spicy for my octogenarian parents who I cook for now.

Carolyn D., that’s some thoughtful cooking! 🍳❤️
So glad **Urfa Biber** hit the sweet spot—bold flavor without too much heat. Perfect for keeping things tasty for every generation! 🌶️👵👴
I'll put it in pretty much anything that needs a wee bit more zing - mac & cheese, scrambled eggs, brownies...
Store owner replied:
Thanks, David! Urfa Biber really brings that deep, smoky heat—glad you’re loving the quality! 🌶️✨
Wonderful! Mild heat, lots of flavor. Minimal to no seeds. This is my second order of Urfa and I got the larger bag this time. I use it on anything that could use a bit of heat and a touch more flavor- and always on pizza.

Thank you! We're thrilled to hear that our Urfa Biber brings you joy. Did you know that these Turkish peppers are sun-dried by day and "sweated" at night, giving them that unique, smoky-sweet flavor? 🌶️✨
Makes a nice change from ground black pepper, especially sprinkled on top of a dish to finish it.

Urfa Biber really is that versatile—whether it’s savory like lahmucun or sweet in cardamom ice cream, you’re onto something magical. 🧀🍳 Keep pushing those flavor boundaries!
Bought this on recommendation in your Pikes Place store and I love it! A local restaurant made an Urfa Biber glazed fish and it has given me some new ideas, but Im also a huge fan of this in chocolate desserts, like brownies. So unique and fun to play around with!

Thanks for sharing your experience! 😊 Urfa Biber is such a versatile spice, isn’t it? We love that you’re experimenting with it in both savory dishes and chocolate desserts 🍫

Urfa loves you back! Thanks for your review.
Can't help it. I love anything peppers in my cooking. This pepper is versitile. And did you know they are good for you? I even sprinkle this on my green salads.
Highly recommended! Super fragrant with a slight sweetness. A nice change from pepper on air fryer chicken. Added to scrambled eggs for breakfast, urfa biber makes routine eggs a treat.
Put it in anything Truly, anywhere you want depth of flavor, add some urfa biber. I've been using it in everything so long, we still call it "the Biebs" in our house.
Since 1995 we've sourced and blended the finest flavors we can find. Nearly all of our spices are available whole or ground, and we grind in small batches shortly before shipping.
