Chorizo Bomb Stuffed Acorn Squash
Acorn squash is one of my favorites because they can be personal sized and filled with whatever you're craving. This recipe is simple and Chorizo Bomb does all of the work. As the name implies, it is an explosion of flavors with minimal ingredients. We start off by roasting the acorn squash until tender and caramelized to bring out its nutty sweetness. We kept this recipe grain-free by stuffing the squash with ground chicken and sweet peppers. To bring it all together, we added Chorizo Bomb which is made up of ground smoked chilies and oregano, thyme and cumin. In a matter of minutes, your house will smell of Fall chiles. Add a sprinkle of cheddar, then a quick trip to the oven for golden brown deliciousness.

Who can resist a tamale dumpling? Not us! Inspired by Rick Bayless's Chipotle Beans with Masa "Gnocchi" we decided to give these little cuties a spice makeover and pop them into a belly warming chicken soup. We dubbed it Tamale Soup after the first bite because it has all the goodness of a tamale, but in soup form. It is a hearty crowd pleasing soup with bold flavors, perfect for game day or family get togethers. Slow cooked chicken thighs seasoned with plenty of our Adobo spice made a savory base for the little masa dumplings. We infused the dough with a healthy measure of our Chorizo Bomb for a big bite of flavor, and just like tamales, you can't take just one bite!

This southwest pumpkin soup is a delicious fall treat, perfectly spiced with warm heat from our Chorizo Bomb. Sultry smoke from our perennial favorite, smoked paprika, rounds out the taste. Cooking your own pumpkin for this recipe is really easy, but the canned pureé works fine as well. Serve it up with crusty bread and a nice porter or stout and you’ve got an instant Oktoberfest!

Who doesn't love food that you can hold in your hand? The beauty of empanadas is that the rich, buttery dough can be filled with almost anything - sweet or savory. Our Ancho Chili Powder is mild-medium in heat and adds magnificent depth to the beef and vegetable filling we chose. Ancho chiles have a wonderful, darkly sweet flavor, so we added a little Alderwood Smoked Salt for just a touch of smoky contrast. They can be served either hot or at room temperature - we like ours with salsa, sour cream and a Hibiscus Margarita.
