You'll get that light feel of a salad even without any lettuce present, and it's easy to substituteĀ raisins or fresh grapes for the dried cranberries to customize the dish as you please.Ā

Ingredients

For the dressing
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tablespoon apple cider vinegar or lemon juice
  • 1 tablespoon honey
  • 1 teaspoon chopped fresh thyme
  • 1 1/2 teaspoons Emerald City Seasoning
For the salad
  • 1 cup diced cooked ham or turkey breast
  • 2 large red apples, cored and chopped
  • 1 cups sliced celery
  • 1/2 cup lightly toasted pecans, roughly chopped
  • 1/2 cup dried sweetened cranberries

Directions

  1. Whisk together the mayonnaise, sour cream, cider vinegar, honey, and Emerald City Seasoning in a large bowl.
  2. In the same bowl add the salad ingredients: ham, chopped apple, celery, pecans, and dried cranberries.Ā 
  3. Gently fold in the dressing.
  4. Refrigerate until serving.
