In a large pickling jar add all of the ingredients, close and give it a good shake. Shake container a couple of times a week. Let the gin sit for 3 weeks and strain through cheese cloth and then through coffee filter. The liquor will look a darker green color but once in a cocktail it should be the color of Chartreuse. If the color is not as bright of green as desired add a drop of green food coloring.
For the Cocktail:
Add one large ice cube to a rocks glass.
Pour in gin, lime juice and soda. Give it one stir and garnish with lime peel.
