Mom's Scottish Shortbread

There are many shortbread recipes out there, but this is the one we have always used. When my Mom was growing up in Boise, there was a Scottish woman who lived down the street from her. She gave my Mom her family recipe which fits perfectly in a pie tin. We usually make two tins worth, as one disappears too quickly. This recipe is also a great one for adding spices to it. The sky's the limit!

Directions

Preheat oven to 325 degrees F.

Cream butter, salt and sugar together. Add flour, and mix well. Pat into a pie tin.

Bake for about 20 minutes, until the top begins to brown. Remove from oven, let cool, then cut into wedges or pieces. Store in an airtight covered container for a week, but they'll be gone before then.

Notes:

- Can also add 1 - 2 teaspoons of your favorite spices to basic shortbread recipe. Add in the first step. Try with Advieh, Poudre Douce or crushed Pink Peppercorn.- Browned Sugar Shortbread: Substitute brown sugar for white sugar.

- Brown Sugar Oatmeal Shortbread: Substitute brown sugar for white sugar and 1/4 cup oatmeal for 1/4 cup flour.

- Chocolate Shortbread: Substitute 1/4 cup Valrhona Cocoa Powder for 1/4 cup flour. Urfa Biber is excellent in chocolate shortbread.
