Camellia sinensis

Each toucha, a firmly pressed pellet of tea, has been aged in buried bamboo baskets for five years. The result, when brewed properly, is a spectrum of flavors starting with a dark musty character to a sweet finish. The toucha, or "bird's nest" must be broken before steeping to aid in the release of flavor.
