

Cymbopogon citratus

The dried leaves of the lemon grass stalk are used in
Asian curries and herbal tea
infusions. It's not a good substitute for recipes that call for the fresh
leaf or bottom stalk of the plant, but ground and added elsewhere in Thai
soups and stocks it has no substitute. We particularly like this in teas
with hibiscus when you want a "zing" to your palate.
