

Poudre forte was a spice mix used throughout medieval Europe and is still used today by culinary recreationists. The actual components may vary, but poudre forte (“strong powder”) is usually based on cinnamon, nutmeg, clove and black pepper, four of the most important spices of the early spice trade and we have added grains of paradise to round out the flavor. A sweetly aromatic blend, but with a good bite, it was used liberally in all manner of both sweet and savory dishes.
