

This rich and toasted blend from the United Arab Emirates has it's roots in the spice islands. Aromatic cassia cinnamon chips are toasted alongside Tellicherry pepper, cumin, coriander and fennel and finished with just a hint of turmeric and a touch of mild chile flake. We first tried this blend as a rub on braised or roasted meat with great results, from chicken and pork to lamb and beef. It also goes well on winter squash or in a hearty vegetable stew.
