

Sri Lanka gained independence from India and one taste of their curry will show both shared heritage and their essential differences. Dry roasting of the spices and a lack of Turmeric make this curry powder unique. Used principally for meat dishes, it is deep and rich with the flavors of Coriander, Cumin, Fennel, Fenugreek, Cassia, Clove, Cardamom, Pequin Chile, and Tellicherry Black Pepper. Each spice achieves maximum flavor at different times and must be roasted separately.
